Make your own Tabasco, actually quite an easy task. Something I have worked at recently….
With gloved hand remove stems and slice a lot of chilli’s in half, place in a sterile jar and then cover with some good sea salt, screw on the lid and wait for approx 1 – 2 months.
Bubbles will begin to form as this is the fermenting process. When fermenting is complete and the contents are stable (the bubbling has ceased) remove the chilli’s to another sterile jar and then cover with a good quality white wine vinegar, let sit for another month, even longer if possible. The folks at Tabasco let theirs ferment in Oak barrels. Now blend the contents and pass through a couple of layers of cheesecloth. Bottle and you will have a ample supply of pure chilli goodness.
It goes without saying that each stage of this development process is carefully undertaken, well ventilated area, gloves etc and also free of children.
