Beetroot

With a distinctive deep purple colour, Beetroot’s vibrant anti-oxidant pigments provide anti-inflammatory and detoxification support. Usually served uncooked, Beetroot is a welcome addition to a salad or it can be roasted or boiled and prepared as soup. It is also a good source of vitamin B and is said to help reduce the risk of heart disease.

Serving suggestion: Peeled beetroot can simply be grated, tossed with some orange juice and eaten raw. It can also be made into a delicious relish and served with lamb.

Quirky fact: If boiled, the concentrated liquid obtained from the beetroot can be used as an effective cure for dandruff.
