Prawn Cocktail…a classic

A fail-safe. Who doesn’t love the classics? A perfect little appetiser at any time of the year. Choose the freshest prawns you can find. Presenting this in a little jar or glass makes for a real head turning opener at any stand up function. Match it with the Waipara Hills Marlborough Cuvee and you’ve got a sure knock out for your next shindig. Enjoy



Ingredients
12 cooked, peeled and de-veined prawns, where possible from a sustainable source
1 avocado
8 Cherry tomatoes, cut in ¼’s
½ an ice berg lettuce, washed and cut into fine shred (chiffonnade)
Juice of 1 lemon

For the Marie Rose sauce
½ cup best quality whole egg mayonnaise
1 tbsp Tomato sauce
2 tsp Brandy
Tabasco and lemon juice to taste

Method

For the sauce
Mix the tomato sauce, brandy, lemon juice and Tabasco into the mayonnaise. Taste

Peel and dice the avocado. Mash with the juice of 1 lemon until smooth, season with salt and white pepper. Place a small amount of avocado puree in the base of a serving glass. Top with some lettuce, the cherry tomatoes and then the prawns. Cover the prawns with a spoon of Marie Rose sauce and serve with extra lemon.
